Sup Buntut Kacang Merah


BAHAN:
400 gram buntut sapi, potong menurut ruas
1,5 liter air
100 gram kacang merah kering, rendam semalam
2 batang (100 gram) wortel, potong bentuk bunga
2 batang daun bawang, potong 4 cm
1 sendok teh kaldu bubuk rasa sapi
1 sendok teh gula pasir
1 sendok makan minyak untuk menumis
1 batang daun seledri, potong




BUMBU HALUS:
3 siung bawang putih
1/4 sendok teh merica
1/8 sendok teh pala
garam secukupnya


CARA MEMBUAT:
  1. Didihkan air, rebus buntut sapi hingga lunak. Ukur kaldu sapi hingga 1 liter, jika kurang tambahkan dengan air. Masukkan kacang merah, dan masak hingga kacang lunak.
  2. Masukkan wortel dan bumbu halus, aduk rata. Masak hingga mendidih, tambahkan daun bawang dan daun seledri, masak sebentar, angkat.
  3. Sajikan sup buntut kacang merah dalam mangkuk, taburi bawang goreng. Hidangkan bersama sambal kecap, bila suka.
